  • Artisanal Cheeses

  • Fromager d’Affinois de Brebis
    Fromager de Brebis is a soft bloomy rind sheep’s milk cheese from the Rhone-Alps region in France. Produced by the well-renowned Guilloteau creamery, it is very similar to the other sheep’s milk bloomy rind cheeses produced by the company. The cheese is produced in a rectangular shaper and also hails the name Le Berger de Rocastin. The paste is mild and rich while the rind provides a flavor and texture that is savory and builds complexity.

     
  • Comté
    Comté, the French word for county, is made and named after the region of Comté, France. This is a cooked and pressed cow’s milk cheese, made exclusively from the milk of the Montbéliarde cow. Being the first established AOC cheese in 1958, you are guaranteed the highest quality of artisanship leading into its premier flavor, aroma, and complexity. With one year of aging, flavors of nuts and salty fruits fancy your palate.

    This cheese is a centuries-old DOC table cheese from Tuscany. This Pecorino is sturdy and nutty with a hint of salt on the palate. Its pleasant and inviting nature appeals to cheese lovers and novices alike.

    Aged six months or more, this pale, ivory cheese is firm, dense and smooth with the slight graininess of a long-aged cheese. The flavor is nutty and brown-buttery, with prominent caramel notes.     Produced by the award-winning Rogue Creamery in Oregon, this cheese is only released on a limited basis. Echo Mountain blue cheese gets its unique flavor and characteristics from blending raw goat and cow’s milk. Aged for at least 18 months, this cheese is smooth, crisp, and has a subtle goat’s milk flavor on the finish. Enjoy this cheese with Natural Honeycomb.
