Gideon's Bakehouse construction - August 11 2020

Here is a latest look at Gideon's Bakehouse, which is currently under construction in The Landing at Disney Springs.

The interior build out is fully underway, and on the exterior, some new distressed signage gives a hint to the backstory.

Lindwurm Bookseller, Curious Books & Antiquities appears to be the name of the building's former occupants, part of the Victorian design to the new shop.

No word yet on an opening date, but we understand the project is being fast-tracked to completion.

We went to Gideons for the very first time last month and it was ... amazing! Those cookies are ridiculous! We found a recipe online that allowed us to make some about 90% as good at home but man if they’re available at DS this will be incredible! I just hope they allow you to order the goods in advance!

I was getting excited thinking a specialty book shop would be attached to this by how the news title reads, sadly its just some backstory.

I'm beginning to hate this thread - because my willpower is waning. Will not drive to East End Market... Will not drive to East End Market...

that is going to be a perfect location for them. Right in the middle of everything!

Photo update as of Saturday, June 27, 2020. The old Erwin Pearl, and lately Off the Cuff, store is closed and signage removed. Since this location is at The Landing and across from the Hangar Bar, this will probably be the new location for Gideon's Bakehouse.

Yep. I will say the cookie was huge and so decadent though, lol.

Rustic Cuff shut down abruptly. I'm not sure if it's last day was 6/23 or 6/24, but either way signs were removed. I suspect this would go in that space.

The chocolate is definitely the main ingredient that makes or breaks a cookie. Guittard has great chocolate. I would like to know what brand of chocolate they use.

They really don't taste more like a cake than a cookie, and they don't have the texture of a cake, either. And they're definitely not messy if they're baked properly, allowed to fully cool, and then chilled to re-harden the chips on the inside and out. If you don't bake them properly and let them get a pretty good chill before serving, you could have a gooey, doughy, melty chocolate mess but not if they're done correctly. Whether you like this cookie probably has a lot to do with your preference in terms of the chip:dough ratio. I use Guittard Extra Dark in the knock-off recipe, so I'm not bothered by the ratio. 😍

I think they look beautiful, but I'm a more the merrier type of guy.
