    This is a fresh sausage made out of a farce of rabbit, sweetbreads, and pistachio. It has notes of clove, coriander, and grains of paradise. It is accompanied by cherry-oxtail marmalade

  • Ibérico de Bellota
    The Ibérico Pig, commonly known as “pata negra” (or “black hoof”), is the direct descendant of the wild boars who roamed long ago across the Mediterranean. They are bred on the Iberian Peninsula, in the Dehesa, a forest full of oak trees, herbs and leguminous plants, the perfect habitat for the Ibérico pig. This acorn-fed free- range ham is purely fed on acorns from September to February; they are then aged for 4 years during the curing process

  • Chicken Rillettes
    A confit of smoked chicken leg, preserved in duck fat. Rich and creamy in texture with a true smoke essence

  • Saucisson en Brioche
    We make a French-style pork sausage with notes of ginger, clove, nutmeg, and allspice. The sausage is then baked inside a buttery loaf of brioche and is served with a salad of frisée, truffle, and radish

  • Bison Sausage
    This sausage is made with Bison strip loin. It is seasoned with cumin, fenugreek, garlic, and peppercorns. It is paired with grain mustard

  • Laura Chenel’s Tome
    Laura Chenel’s Tome is a pale ivory cheese with a texture similar to aged Cheddar or Parmigiano. Our Tome is entirely handmade, rolled in cheesecloth to form it into 3-4 pound wheels and aged for 8-12 months in our aging rooms. Tome slices, grates and crumbles easily. It has a rich, nutty aroma with a sweet caramel finish. It is complemented by our quince preserves

    The creaminess of this Jersey cow cheese immediately delights the palate and the complexities of the tea-rubbed rind continue through the finish. The sweet fragrance of orange blossoms in April comes to mind. The creamy nature of this cheese will burst in your mouth and the slight citrus undertone will create an opportunity for some wonderful pairings. It is paired with honeycomb

    An American Original, made by Sebastian von Trapp on his family’s dairy farm in Waitsfield, Vermont. Oma is made from the unpastuerized, organic milk of Jersey breed cows. The paste is soft, the rind is thin and orange with an overlay of white flora and tasting notes of roasted nuts and cultured butter. We serve this cheese with yuzu-grape jelly

    The Rogue River Blue is naturally rinded. The aging process imparts flavors from the Rogue River Valley. These naturally occurring molds from the terroir impart flavors of wild ripened berries, hazlenuts, and pears. It is preserved in grape leaves from the Applegate Appellation and the leaves are soaked in pear brandy and tied with raphia. This cheese is accentuated with cranberry-almond panforte
