New Spring Menu at The Hollywood Brown Derby Brings Fresh Flavors to Disney's Hollywood Studios

Spring brings fresh flavors to The Hollywood Brown Derby at Disney's Hollywood Studios, with an updated menu launching March 4, 2025.


Here is a look at what you can expect.

Appetizers

House-made Ravioli – Filled with English peas and served with carrot purée and pickled alba mushrooms.

Creamy Corn Bisque – Topped with crab salad and saffron crème fraîche.

Sake-braised Pork Belly – Accompanied by apple-ginger purée, shiitake mushrooms, tasso ham, and shiso.

Grand Marnier Liqueur-macerated Seasonal Fruit Burrata – Served with lollo rosso, frisée, caramelized spiced pine nuts, and citrus vinaigrette.

Entrées

Filet Mignon – Paired with potato-carrot mash, spicy broccoli rabe, black garlic butter, and madeira demi.

Grilled Ora King Salmon – Served with creamed corn succotash, pancetta, and Spring onion pistou.

Lamb Shank – Accompanied by quinoa-pea salad, paneer paratha chips, and mint yogurt.

Free-Range Chicken – Served with scallion-chorizo cakes, roasted squash, grilled peppers, and red mole sauce.

Enhancements

  • Au Gratin Potato – Topped with black diamond cheddar.
  • Braised Wild Mushrooms – Cooked with shallots, tarragon, and truffle butter.

What happened to the plant-based options? Did they ditch the “have a plant-based entree at every table-service restaurant” project? Those were often the overlooked gems of the menus…

It sounds like they don't understand why she is asking the question. They seem to think she doesn't like them. Start with "I am allergic to mushrooms and mushroom powder. Can you let the kitchen know?"

It's not so much WDW, but everywhere else. Too often people pull the allergy card, when they just mean they don't like something (which is a big PIA for the kitchen). It's like telling McDonald's you are on a low salt diet so you need fries with no sale just so you get fresh fries. Or telling people you have a service animal when you just want to bring your poorly trained dog with you. It makes things difficult for people who actually do have problems with food, or have service animals. Mushrooms seems to be one of those things. Most of the time, if she askes if there are mushrooms in the dish, she gets a "yes, but you wont taste them, they are chopped fine, or they are mushroom powder" response. That is actually worse. If they are big pieces, and have not been in a braise for hours, she can pick them out and be fine. The powder is the worst for her.

Be sure to let them know that she has an allergy. They are very good with this. I'd let them know before you come and they will send you helpful guides.

What really bothers me, is mushrooms send my wife into gastro distress in under 30 minutes. She likes them as far as eating them is concerned, but she has a horrible reaction to them. They seem to be EVERYWHERE as of late. Mushroom powder (to add umami to dishes) is also a big thing. Many times we get the "you won't even know they are in there" speech, to which she responds "oh, I WILL know they are in there, and so will your ladies room"

Prices are what they are. Some of this is not crazy, but I I always find $40 for a chicken dish to be pretty egregious(WDW prices chicken dishes too high in general).

Wow, really sad to hear this. We last dined at Citricos right after New Years 2023, and had a wonderful meal, 3 courses and a well-paired wine, fantastic service. We left feeling very satisfied with our meal (though probably a bit shocked at the bill!) I'll just cling to that memory, as well.as the equally great dinner we had on New Years Day 2023 at Flying Fish. Excellent, but very expensive. And we live in NYC, where its plenty pricey to dine out.
