New Spring Menu at The Hollywood Brown Derby Brings Fresh Flavors to Disney's Hollywood Studios

Spring brings fresh flavors to The Hollywood Brown Derby at Disney's Hollywood Studios, with an updated menu launching March 4, 2025.


Here is a look at what you can expect.

Appetizers

House-made Ravioli – Filled with English peas and served with carrot purée and pickled alba mushrooms.

Creamy Corn Bisque – Topped with crab salad and saffron crème fraîche.

Sake-braised Pork Belly – Accompanied by apple-ginger purée, shiitake mushrooms, tasso ham, and shiso.

Grand Marnier Liqueur-macerated Seasonal Fruit Burrata – Served with lollo rosso, frisée, caramelized spiced pine nuts, and citrus vinaigrette.

Entrées

Filet Mignon – Paired with potato-carrot mash, spicy broccoli rabe, black garlic butter, and madeira demi.

Grilled Ora King Salmon – Served with creamed corn succotash, pancetta, and Spring onion pistou.

Lamb Shank – Accompanied by quinoa-pea salad, paneer paratha chips, and mint yogurt.

Free-Range Chicken – Served with scallion-chorizo cakes, roasted squash, grilled peppers, and red mole sauce.

Enhancements

  • Au Gratin Potato – Topped with black diamond cheddar.
  • Braised Wild Mushrooms – Cooked with shallots, tarragon, and truffle butter.

Prices are what they are. Some of this is not crazy, but I I always find $40 for a chicken dish to be pretty egregious(WDW prices chicken dishes too high in general).

Wow, really sad to hear this. We last dined at Citricos right after New Years 2023, and had a wonderful meal, 3 courses and a well-paired wine, fantastic service. We left feeling very satisfied with our meal (though probably a bit shocked at the bill!) I'll just cling to that memory, as well.as the equally great dinner we had on New Years Day 2023 at Flying Fish. Excellent, but very expensive. And we live in NYC, where its plenty pricey to dine out.

why do they insist on using mushrooms in everything, it has to be a cheap ingredient. noticing this across property.

At least they changed a bit, but seriously mushy pea pasta ? We've been quite disappointed with the Derby menu for the past few years, but still love the grapefruit cake which draws us back. They did break thier obsession with duck three ways but they don't have a a solid entree list anymore.

I'm pretty sure they'll raise prices and serve smaller portions. We'll probably find out tomorrow. We'll see. In that regard, if my experience at Citricos this past December is any indication, I had the smallest portion of fish ever, I'm talking a 2"X 2" size, it was literally 2 bites! I also had a tiny salad and dessert. It was good, but the portions were quite small. Left hungry.

Will look tomorrow morning. I just ran through the WDW site a few weeks ago to get the latest pricing before their inevitable Q1 price change. Pricing for their TSRs is high as it is so will be interesting to see if they decide to either increase to or, like you mention, cut costs.
