Gideon's Bakehouse has announced Six Ravens, a new hand pie concept opening at Disney Springs later this year.
The announcement came on the five-year anniversary of Gideon's Bakehouse at Disney Springs. Founder Steve Lewis revealed that Six Ravens will occupy the former Art of Shaving storefront near the current Gideon's location.
What Six Ravens Will Offer
Six Ravens specializes in what it calls "Coffyns," the original term for old school hand pies. The shop will serve savory hand pies made with fluffy yeast bread and fillings created by Gideon's kitchen staff and collaborating Central Florida chefs.
The menu will also include potatoes, local draft beer, and desserts.
Lewis described the concept as designed to meet grab-and-go needs in a small space while bringing local flavors to Disney Springs visitors.
Local Chef Collaborations
The concept builds on Lewis's connection to Disney Springs. He got his start at the shopping district with a secret menu item at The Polite Pig before opening Gideon's Bakehouse.
Six Ravens will feature collaborations with Orlando culinary talent, though specific chef partnerships have not been announced.
Timeline and Location
Six Ravens will open at Disney Springs later in 2026. An exact opening date has not been released.
Window graphics went up at the location in December 2025, teasing the project. A Notice of Commencement filed last month showed The First Raven LLC, led by Lewis, as the client for the buildout.
The space sits a few doors down from Gideon's Bakehouse, one of the busiest food locations at Disney Springs.

Gideon's started in late 2016 at Orlando's East End Market. The Disney Springs location opened on December 20, 2020, and has maintained popularity with guests lining up for nearly half-pound cookies made in small batches.
