New Gideon's Concept at Disney Springs

Gideon's Bakehouse has posted on Instagram that it will share big news this Friday, presumably about its new Disney Springs location at Walt Disney World.

The post includes a short message: "We're dropping some big info this Friday, so meet me back here in a couple of days. I'm excited to tell you something."

The announcement is expected to provide details about the new store location currently under construction at Disney Springs.

What We Know So Far

Window graphics went up in December 2024 at the former Art of Shaving storefront, a few doors down from the current Gideon's Bakehouse. The graphics feature red artwork with raven imagery and text reading "Pardon Our Appearance. Something New Is Coming Soon."

A Notice of Commencement filed last month listed The First Raven LLC as the client for a "New Tenant Build-Out of Lease Space in Disney Springs." Public records show Steve Lewis, founder of Gideon's Bakehouse, leads the company.

Unanswered Questions

It remains unclear how the new space will operate. The location could serve as an extension of the existing Gideon's Bakehouse or as a separate concept from the same team. We believe it is the later, with a new category of quick service food on offer.

About Gideon's Bakehouse

Gideon's started in late 2016 at Orlando's East End Market with one employee and an $800 budget. The bakery became known for nearly half-pound cookies made in small batches, with lines regularly exceeding an hour as guests waited for limited flavors.

The Disney Springs location opened in December 2020 and has remained one of the busiest food destinations at the shopping and dining district.

Check back Friday for the full announcement from Gideon's Bakehouse.

Hands off my chicken! That place is not going anywhere, it's still very popular (and if you believe rumours I've heard, one of the only locations that is consistently profitable). It's also very good chicken. I may be slightly biased... But I do wish they let you get a crazy number of sauces like they used to. I don't like to choose!

Would love to see a Greggs Bakery pop-up at Disney selling savoury slices (Fajita Chicken Bake or Steak Bake currently on sale in UK High Streets for £2.60/$3.50; Vegan Bakes 25 cents cheaper and Vegan Sausage Rolls at £1.40/ $1.88). Maybe as a PR stunt Greggs could bid for a food stand in the UK Pavilion at EPCOT during one of the festivals.

Depends. Is there a pic of Betty Childs at the bottom?

Completely OT, but since my daughter worked at a Crumbl last summer, I asked her about this. She personally made the cookie doughs from flour, sugar, eggs, butter, baking soda, etc. She did say they use “special flavors” from time to time for particular cookies (like Biscoff flavored power) to match a specific flavor. Could it be possible that something labeled Duncan Hines was used in a Crumbl store? Sure. But Crumbl does not use boxed cake mix as the basis to “make their cookies.” But, needless to say, after one summer of her bringing home extras, I hope I never see another Crumbl cookie.

They should have the Gideon’s line snake through here.

Cool, I place to get some food while you are waiting in the cookie line!

I like the idea of something savory instead of sweet... Looks like it will be great....wonder if it will be open by June... At this point, shouldn't they just open a full restaurtant themed like the bakehouse in the Tim Burton-esque style? If there was one, I am sure we would eat there... Would be way more interesting than Chicken Guy or Blaze Pizza...

Well it certainly is no $28 slice of cake.

Six Ravens opens later this year, selling old school hand pies and more: Today is the 5-year anniversary of Gideon’s in Disney Springs, and we’re ready to celebrate with you! It feels like a good day to make an announcement. This year might be our biggest year of growth, and there is one little mystery that people have been asking about. So let me tell you a little story.⁣⁣ ⁣⁣ A few years ago, we started exploring ideas for something new that met a grab-and-go need in a small space. I will admit that another small shop caused some hesitation, but an idea came to mind that was hard to ignore. What if we created a place that offered up savory delights in collaboration with some of our favorite Central Florida chefs? After all, I got my start at Disney Springs as a secret menu item at the Polite Pig. It’s important to pay it forward and bring more local flavors to the international crowds we meet every day. So with that, I introduce you to Six Ravens. This new concept specializes in a creation we call Coffyns, the original term for an old school hand pie. This fluffy yeast bread is filled with flavors created not only by the talented minds in Gideon’s kitchen but also by some of your favorite Orlando culinary superstars. Combine that with potatoes, local draft beer, and, of course, some tasty desserts, and you will have a fun new place to fuel your park adventures.⁣⁣ Six Ravens opens at Disney Springs later this year. Stay tuned here for details or follow @six.ravens! I’ll eventually start telling you more about our journey and share some behind-the-scenes as we build the stories in this new chapter. ⁣⁣

Crumbl uses boxed cake mix to make their cookies…literally seen the Duncan Hines boxes at my local shop. No thanks. Soft cookies aren’t for everyone but they certainly are popular.

The only one I've ever had was the chocolate chip -- it's definitely possible I'd like other flavors more, although I'm not planning to ever wait in a 30 minute long line to buy anything from there so I may never know!
