Pumpkin season is here at Gideon's Bakehouse, and it comes with a story. Dr. Tobias Brimstone, the Intrepid Explorer of Gideon's lore, has arrived for September and brought his own otherworldly take on pumpkin spice with him. The month covers all the bases — a new limited cookie, a pumpkin caramel cake, the return of the Pumpkin Chai Nitro Cold Brew, and a full Dr. Brimstone merch drop.

The September Limited Cookie: Pumpkin Bread Chocolate Chip

The Pumpkin Bread Chocolate Chip Cookie is the limited flavor for the full month. It's built around real pumpkin and Dr. Brimstone's pumpkin spice blend, with a small amount of chocolate worked into the interior — enough to add depth without overwhelming the pumpkin. The whole thing is topped with pumpkin butter crumbs.

Pumpkin Caramel Double Frosted Cake

The September cake is a double-frosted build: a full layer of caramel buttercream underneath a full layer of pumpkin cream cheese buttercream. The cake itself is a vanilla cinnamon swirl — soft with a slightly crumbly texture.

Available by the slice every Wednesday and Saturday throughout September. Whole cake preorders are available this month only at the East End Market location.

September Collectible Menu

Dr. Tobias Brimstone appears on the September collectible menu as a Morsel character. This is his first appearance at Gideon's since January 2022. Gideon's is hinting he may be connected to something bigger happening at the bakehouse — details to follow. Pick up the menu in line at Disney Springs or free with any online merch order.
