Gideon's Bakehouse is kicking off June with the return of Butterscotch, the werewolf pajama-wearing mascot, as the face of this month's limited offerings. There's a lot to get through — a new cookie, three cakes, a cold brew, collectible menu, and a full merch drop.
The June Limited Cookie: Butterscotch's Cookie Butter Butterscotch Cookie
The star of the month is Butterscotch's Cookie Butter Butterscotch Cookie, available all month at both Gideon's locations.
This handmade, almost half-pound cookie is built on Gideon's signature dough blended with Biscoff Cookie Butter spices, then packed with premium butterscotch chips and crushed Biscoff cookies. It runs sweeter than a typical Gideon's cookie — deliberately so — making it one of the more sugary offerings the bakehouse has put out. If you lean toward rich, caramel-forward flavors, this one is for you.
Three Cakes This June
June brings two returning favorites and one brand-new flavor to the cake lineup:
- The Grand Cookie Butter Butterscotch Cake — an upgraded take on Gideon's popular Cookie Butter Cake, built around the same flavor profile as this month's cookie
- Strawberry Crumb Cake — a brand-new addition, described as Butterscotch's favorite cake in her "sweet alter ego" form
- Mourning Joe's Chocolate Coffee Toffee Cake — a returning fan favorite, layered with dark chocolate cake, coffee-speckled buttercream, and a chocolate ganache drip
Cold Brew at Disney Springs
The Almond Cookie Cold Brew is back for June, but only at the Disney Springs location. It combines brown sugar, vanilla, and sweet almonds in nitro cold brew form. It's limited to the month, so don't sit on it.

This month's collectible menu features Butterscotch in Morsels form. You can pick one up by waiting in line at the Disney Springs location, or get one free with any online merch order.
