Bourbon Steak by Michael Mina opens to the public July 26, but as part of an early media preview at Walt Disney World Dolphin, we got a first look at the all-new dining room and menu. The restaurant replaces the former Shula’s Steakhouse with a completely reimagined space and menu.
A Modern Redesign with a Lighter Touch
The dark, club-like look of Shula’s is gone. Bourbon Steak introduces a much brighter, more open dining room. Rich mahogany walls have been replaced with a lighter palette, and previously covered windows are now uncovered to bring in natural light. The room feels elegant but relaxed, suitable for both upscale dinners and casual celebrations.
At night, lighting dims and the space shifts to a moody, intimate setting - ideal for date nights and special occasions.

During the preview, we had the chance to try several menu items, including the short rib, and sea bass - and everything delivered on flavor and presentation. We’ll be back after the official opening on July 26 for a full taste test.

Instead of a traditional bread service, guests are greeted with a trio of French fries and three dipping sauces - a signature Mina touch and a memorable way to start the meal.
Opening July 26
Bourbon Steak Orlando opens to the public on July 26 and becomes the newest entry in the Walt Disney World Swan and Dolphin’s lineup of 23 restaurants and lounges. With its modern design, elevated menu, and signature service, it’s positioned to be a destination restaurant for both visitors and locals.
“Bringing Bourbon Steak to the world’s most popular vacation destination is a natural fit,” said Chef Mina. “A trip to Orlando is all about creating lasting memories - and that’s exactly what we aim to deliver: a dining experience guests will remember for a lifetime.”
