The opening of Wine Bar George is nearing, and Disney has now given us a look at some of the dishes that will be served alongside more than 130 wine selections.

This two story, 200-seat wine bar, will serve wine by the ounce, glass and bottle - curated by Master Sommelier George Miliotes.

Here are some of the highlights from the small plates and sharable entrees menu.

The Big Board – A selection of six artisan cheeses and five crafted meats that serves two or more.

Grilled Octopus with Lemon Vinaigrette – A salad with tender pieces of Spanish octopus (a result of grilling then chilling the octopus) with a touch of acidity from the lemon vinaigrette.

Crispy Mac & Cheese Bites – Served with tomato nage and Pecorino, a take on a grilled cheese with tomato soup.

Porchetta Spiced Pork Cheeks – Served with a creamy three-cheese polenta, these small bites of meaty goodness are cooked long and slow to perfection. The orange gremolata takes it over the top.

Grilled Whole Greek Sea Bass – One of the family-style plates that serves two or more, this light and tender whole fish is served with cannelloni bean ragoût and seasonal vegetables.

Olive Oil Cake – This moist cake with a rich olive oil flavor is served with candied olives and lemon mascarpone.

I priced up a bottle of one of those wines by the ounce. It looks like the mark up on the bottle was something like $800!

REVIEW - Wine Bar George at Disney Springs

djkidkazMay 20, 2018

Homecoming is one of the few restaurants I have tried at Springs that I wasn’t impressed with and didn’t have a desire to return. The other would be that new pizza place which I don’t even remember the name of. I love Blaze, DLux, frontera, morimoto and Boathouse! #firecrackershrimp

Fontera? Holy Guacamole that looks good... even though there isnt guacamole!

Homecoming is out for us this year, after going in each of the past two years. Carne asada > fried chicken. (Not by a lot, mind you.)

Here is a video blurb from Scott Joseph's website. He was there for the preview for invitees. https://www.scottjosephorlando.com/news/4341-first-look-wine-bar-george-at-disney-springs

I had the same problem. Took a lot of will power not to go to Art Smith's again.

Agreed, every trip I try to at least eat once there and its hard to choose because I have favorites I want to return to and new ones I want to try.

Disney Springs provides amazing food. Much more unique than almost all options in the parks, imo.

danlb_2000May 18, 2018

I am the opposite, I can't spend enough time on my trips at DS to try all the restaurants I want to try there.
