  • Artisanal Cheeses

  • Robiola Bosina
    This cheese produced in the Langhe region of northern Italy, is a perfect, creamy blend of cow and sheep's milk. Robiolas come in many shapes and sizes; this flat, square little pillow contains a luxurious, silky paste with smooth, well-balanced flavors. Bosina's rind is resilient enough to protect its interior while it ripens to a deliciously runny consistency. The paste itself is mild, sweet, milky, and well worth tryingnwith a wide range of wines from Merlot to Sauvignon Blanc

     
  • Comté
    Comté, the French word for county, is made and named after the region of Comté, France. This is a cooked and pressed cow’s milk cheese, made exclusively from the milk of the Montbéliarde cow. Being the first established AOC cheese in 1958, you are guaranteed the highest quality of artisanship leading into its premier flavor, aroma, and complexity. With one year of aging, flavors of nuts and salty fruits fancy your palate.

     
  • Pecorino Toscano Stagionato
    This cheese is a centuries-old DOC table cheese from Tuscany. This Pecorino is sturdy and nutty with a hint of salt on the palate. Its pleasant and inviting nature appeals to cheese lovers and novices alike.

     
  • Drunken Goat
    Cabra al Vino! Literally meaning “goat with wine," this semi-firm pasteurized goat from Spain’s Mediterranean coast is cured for 48-72 hours in Doble Pasta red wine. The paste remains nearly pure white and the rind absorbs a lovely violet hue. The paste is sweet and smooth, delicately grapey, with a gentle, pliable texture and mild fruity flavor. A D.O.P cheese, it pairs well with medium fruity reds

     
  • Point Reyes Blue
    This artisanal cheese is produced by the Giacomini Family in the hills of Point Reyes Station just north of San Francisco on their family farm from a closed herd of 250 Holstein cows. It is handmade from hormone-free raw cow’s milk and with enzymes classified as vegetarian by the FDA. The cheese production begins with the fluid milk being pumped directly into stainless steel vats guaranteeing a freshness that can’t be duplicated. Several natural ingredients are added to the Grade A raw milk: cultures for flavor and to increase acidity, enzymes in order for the curd to form, kosher salt for flavor and mold (Penicillium Roqueforti) to create the blue veins in the cheese. The curd is then cut, the whey is drained from the curds and the curds are hooped (poured) into forms to make the wheels. The wheels are then removed from the forms and taken to a curing room for about 3 weeks. The wheels are then hand-salted, turned numerous times by hand and punched with stainless steel needles to introduce oxygen into the body of the cheese. This is done to activate the mold
