  • Cowgirl Creamery’s Red Hawk
    A triple-cream, washed-rind, fully-flavored cheese made from organic cow's milk from the Straus Family Dairy. Aged six weeks and washed with a brine solution that promotes the grwoth of a bacteria that tints the rind a sunset red-orange. Red Hawk won Best of Show at the American Cheese Society's Annual Conference in 2003

     
  • Beehive Barely Buzzed
    This deliciously nutty cheese gets its robust flavor from a hand-applied rub of French Superior Lavender buds and a Turkish grind of "Beehive Blend" coffee from the Colorado Legacy Coffee Company. The rub imparts rich butterscotch and caramel flavors, which manage to find their way to the center. Aging on Utah Blue Spruce aging racks in humidity-controlled caves allows the textures and flavors to develop to perfection

     
  • Moliterno Pecorino al Tartufo
    From the Island of Sardinia off of Italy's southern coast comes this raw sheep's milk cheese laced with Black Truffles. Unlike most truffle cheeses, the truffle paste is infused after Moliterno has been aged so that the cheese develops its own character before the truffles are injected. Though the truffles are only visible in the "veins" the truffle flavor permeates throughout the entire paste of this amazing cheese. During the aging process, oil and vinegar are applied to the cheese's rind to prevent weight loss. Once cut, the dark paste oozes out of the crevices of the cheese like trickles of water from a craggy cliff

    Cabra al Vino! Literally meaning “goat with wine," this semi-firm pasteurized goat from Spain’s Mediterranean coast is cured for 48-72 hours in Doble Pasta red wine. The paste remains nearly pure white and the rind absorbs a lovely violet hue. The paste is sweet and smooth, delicately grapey, with a gentle, pliable texture and mild fruity flavor. A D.O.P cheese, it pairs well with medium fruity reds

    Bayley Hazen Blue is a natural-rinded blue cheese named for the iconic Bayley Hazen Military Road that traverses the Northeast Kingdom. Like most blues, Penicilium roqueforti is used, but the usual peppery spice character associated with blue cheese takes a backseat to sweet, nutty, and grassy flavors in the milk.
